Brinjal Fry

Ingredients
- 500 gm brinjals (eggplants)
- 2 tablespoons Tata Simply Better Cold-pressed Groundnut Oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon urad dal
- 1/4th tsp hing
- Kari patta
- 1 large onion sliced
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves (for garnishing)
For spice mix:
- 1/4th cup peanuts
- 1 teaspoon sesame seeds
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 2-3 dry red chillies
- 6-7 cloves of garlic
Instructions
- 1. Dry roast all the ingredients for the spice mix on medium flame. Grind and make a coarse powder of the spice mix and set aside.
- Wash and cut the brinjals into slices.
- In a pan, heat oil over medium heat. Add mustard seeds and cumin seeds, urad dal, hing, and Kari patta. Once they splutter, add the onions and sauté for a few minutes.
- Add in haldi powder, red chilli powder, garam masala, and salt.
- Add the brinjal slices, stir the brinjals and cook for a few minutes until they start to soften.
- Cover the pan and let the brinjals cook on low-medium heat. Stir occasionally to prevent sticking.
- Once the brinjals are fully cooked and tender, sprinkle the prepared spice mix and give it a final mix.
- Cook for another minute or so to allow the flavours to meld.
- Garnish with fresh coriander leaves.
- Serve the brinjal fry as a side dish with rice or roti.
