Ingredients

  • 1. 1/2 cup of Tata Cold-pressed Coconut oil
  • 1 cup of granulated sugar
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 1 cup of all-purpose flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 cup of shredded coconut
  • 1 tablespoon custard powder

Instructions

  • Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the coconut oil, and brown sugar until it is light and fluffy.
  • Beat in the egg, then stir in the vanilla extract.
  • Now, in the same bowl, add the flour, baking soda, coconut, custard powder and salt.
  • Stir in the shredded coconut.
  • Shape the cookies and roll them in dried coconut. Place all cookies on a parchment-lined baking tray.
  • Bake for 10-12 minutes in the preheated oven, or until it’s golden brown. Let cool on wire racks.
